Last week I was talking about how eating healthy has changed how things taste for me. Some foods I used to run away from are now quite delicious to me – including Indian Food!

One of the items I mentioned that we’ve recently tried was a gluten free cupcake made with chickpea flour and chocolate hummus as frosting.

My wife made these for the family – and we loved it. She was inspired by a recipe on CupcakeProject.com.

I also LOVE the way Stef writes!
Ignoring the sweet and salty roasted chickpeas on top, these gluten-free chocolate cupcakes made with garbanzo bean flour and frosted with chocolate hummus are indistinguishable from the chocolate birthday cupcakes that you’ve had a thousand times – with the smell of smoke still lingering in the air from recently made wishes for ponies and Disney vacations.
I received quite a bit of feedback from our readers – here on the contact page, and on our Facebook and Instagram sites asking for the recipe.
She used the Cupcake Project recipe and simply used less sugar. So, while it’s not sugar-free – it’s pretty darn close!
We bought brownie batter chocolate hummus from the local grocery store. It’s made by Delighted By Hummus.

Their website describes it as:
Dense, fudgy, and (dare we say) more delicious than the real thing – our Brownie Batter Hummus will satisfy all your cravings while packing in the benefits of real hummus! Infinite possibilities for enjoyment include dipping with graham crackers, pretzels, strawberries, marshmallows… and brownies, of course!
They also offer Chocolate Mint, Snickerdoodle and Vanilla Bean! (We haven’t tried those yet.)

How do you eat sweet and stay healthy? Share some ideas with us – we’d love to hear more!
Bon Appetit!
